HERMÈS WATCHES&WONDERS 2026 GENEVA

To celebrate this year’s edition of Watches & Wonders and in resonance with the Skeleton work and visible mechanics highlighted by the House, a menu and tasting ritual were imagined, unfolding around an incredible evolving table designed by the teams at Hermès for the occasion.
The concept of “Squeletage” explores the hidden structure and the Mysterious Mechanics of their transformation.
The menu featured:
~Kohlrabi roll, pear, smoked char

~Swiss ceviche with infused blue peatea broth, radish, citrus marinade

~White asparagus velouté, lemon balm, fish crispy tuile

~Confit lake char, rhubarb & white miso, seaweed and katsuobushi rösti

~Roasted pear, Swiss Gruyère ice cream & warm chocolate coulis
